A weekend alter-ego

Wild Honey Pie is run by Ellis Ng and Jesper, the pair behind Cat in the Hat at Golden Mile Food Centre. For two years this basement unit in Kovan was that bakery’s production kitchen; since December 2025 it opens as a shop of its own, on weekends.

The list changes from week to week — tarts, viennoiserie, sweets and naturally leavened breads, each in small quantities. We stop when the shelves are bare.

Yeast water, not a starter

Our loaves rise on grape yeast water. The flours are written out on the card, in the baker’s order — 50% masuda kobe, 35% ruban brun whole wheat, 15% T170 french rye in the pain de campagne.
